Abstract
Industrija ribe podrazumijeva svaku industriju ili djelatnost vezanu za izlov, uzgoj, preradu, konzerviranje, skladištenje, transport, marketing te prodaju ribe i ribljih proizvoda. Prerada ribe može se nadalje podijeliti u dvije kategorije: obrada svježe ribe (inicijalna prerada svježe ribe) i proizvodnja ribljih proizvoda. Svrha ovog rada bila je istražiti pakiranje, prepakiravanje i skladištenje smrznute ribe i morskih plodova uporabom moderne tehnologije kao i procese prerade i konzerviranja uz vrhunsku kontrolu proizvodnih procesa, na primjeru tvornice Irida d.o.o. Također, konzerviranje hlađenjem, smrzavanjem i dimljenjem, detaljnije je obrađeno u ovom radu.

The fishing industry includes any industry or activity concerned with taking, culturing, processing, preserving, storing, transporting, marketing or selling fish or fish products. Fish processing can be subdivided into two categories: fish handling (the initial processing of raw fish) and fish products manufacturing. The aim of this study was to examine the packing, repacking and storage of frozen fish and seafood with the use of modern technology, processing and preservation with high quality control of production processes, at an example of fish processing plant Irida d.o.o. Refrigeration, freezing and smoking are the methods of preserving fish which were introduced in this paper.
