Celiac disease or gluten enteropathy (GE) is a chronic disease. Occurring in mainly proximal parts of the small intestine, which occurs due to inadequate immune reaction in contact with gluten in genetically predisposed individuals. Removing gluten from food leads to retrieval of histological and clinical signs of the disease. Its reintroduction causes recurrent intestinal histological changes, while clinical symptoms may be absent. Therefore, it is important to highlight that the only cure for celiac disease is a lifelong compliance to glutenfree diet. A gluten-free diet means avoiding the smallest amount of gluten in the diet. In order to treat celiac disease, it is necessary to exclude from diet all foods that contain wheat, barley, rye, oats and their derivatives. Except for the foods that do not naturally contain these grains, all otrher foods need to be tested for the gluten presence, and have to be marked with the international symbol of crossed wheat. Besides the above mentioned therapy, possibilities of oral enzyme therapy are extensively researched. That therapy would allow the occasional introduction of gluten without manifestation of clinical symptoms of celiac disease. We can conclude that it is important to think of the disease in all suspected persons, which should undergo screening, while in cases diagnostic procedures should be performed. This would have both, the short-term and the long-therm effect on health of the patient, and also reduce the number of undetected patients in terms of failure to implement screening in the general population.
