Abstract
Ionski izmjenjivači su krute kiseline, baze ili soli definirane kao netopljivi makromolekularni polielektroliti koji posjeduju svojstvo sposobnosti zamjene određenih iona. Svaki ionski izmjenjivač u svojoj strukturnoj rešetci sadrži čvrstim kovalentnim vezama vezane aktivne grupe koje disociraju u vodi. Zbog disocijacije električki su nabijene te provode izmjenu iona točno fiksiranim mjestima unutar rešetke. Ionski izmjenjivači primjenjuju se različitim industrijama, a najznačajnija je njihova primjena u tehnologiji vode, odnosno pri dekarbonizaciji, mekšanju, demineralizaciji i denitrifikaciji vode. Osim pri obradi vode, ionski izmjenjivači se primjenjuju i u drugim aspektima prehrambene industrije, a naročito kada reaktant u proizvodnom procesu treba biti visoko kvalitetna polazna sirovina, voda. Prilikom primjene ionskih izmjenjivača potrebno je odabrati ionski izmjenjivač koji će nakon uporabe dati produkt zadovoljavajuće kvalitete. Nakon zasićenja ionskog izmjenjivača, isti se regenerira protustrujnim ispiranjem s otopinom kiseline HCl, lužine NaOH ili soli NaCl.

Ion exchangers are rigid acid, base or salt defined as insoluble macromolecular polyelectrolytes possessing property ability replacement of certain ions. Each ion exchanger in its structural grid contains solid covalently linked active groups which dissociate in water. Because dissociation are electrically charged and implement ion exchange exactly fixed locations within the lattice. Ion exchangers are applied to different industries, but the most important is their application in water technology, or in decarbonisation, softening, demineralization and denitrification of water. In addition to the processing of water, ion exchangers also apply to other aspects of the food industry, and especially when a reactant in the production process should be a high-quality starting material, water. In application of ion exchange is necessary to select the ion exchanger to give the product after use of satisfactory quality. After saturation of the ion exchanger, it is recovered by countercurrent washing with a solution of HCl acid, alkali salts of NaCl or NaOH.
