Abstract
Potenciometrija je elektrokemijska odnosno elektroanalitička tehnika koja se temelji na ovisnosti potencijala indikatorske elektrode o koncentraciji određene ionske vrste s kojom se nalazi u kontaktu u otopini. Potenciometrijska mjerenja primjenjuju se na dva načina. Direktna metoda koristi se za određivanje koncentracije određene ionske vrste u otopini ili se određuje koncentracija nekih drugih iona u otopini. Zatim, određivanje završne točke titracije odnosno potenciometrijska titracija kod koje se kao indikatorska elektroda upotrebljava ona koja je reaktivna s obzirom na vrstu iona koji se troše ili nastaju tijekom titracije. Princip potenciometrijske titracije je određivanje nepoznate koncentracije ispitivane otopine titracijom s nekom standardnom otopinom pri čemu nagla promjena potencijala indikatorske elektrode određuje završnu točku titracije (točka inflekcije). Cilj ovog završnog rada je definirati i opisati potenciometriju i potenciometrijsku titraciju, indikatorske elektrode koje se upotrebljavaju u potenciometrijskim mjerenjima te opisati primjenu u prehrambenoj industriji.
Abstract (english)
Potentiometry is an electrochemical or electroanalytical tecnique based on the dependence of the potential of the indicator electrode on the concentration of a certain ionic species with which it is in contact in solution. Potentiometric measurements are applied in two ways. The direct method is used to determine the concentration of a particular ionic species in solution or to determine the concentration of some other ions in solution. Then, determining the end point of the titration, more precise potentiometric titration in which the indicator electrode is the one that is reactive considering the type of ions consumed or formed during the titration. The principle of potentiometric titration is to determine the unknown concentration of the test solution by titration with a standard solution, where a sudden change in the potential of the indicator electrode determines the end point of the titration (inflection point). The aim of this final paper is to define and describe potentiometry and potentiometric titration, indicator electrodes used in potentiometric measurements and to describe the application in the food industry.
