Abstract
Sheme prehrambeno-tehnoloških procesa su iznimno važni dijelovi tehničke dokumentacije industrijskih postrojenja. Sheme su nužne pri planiranju i izradi tehničke dokumentacije strojarskog dijela postrojenja, pri upravljanju i gradnji postrojenja te za vođenje tehnološkog procesa, tehničke preglede, rad i održavanje postrojenja. Pri izradi shema prehrambenotehnoloških procesa koristimo se normiranim simbolima koji prikazuju pojedine uređaje ili procesne tokove. Kada se procesna shema u potpunosti definira može se provesti simulacija procesa koja nam daje relevantne informacije o funkcioniranju procesa i prije njegove konačne izvedbe. Simulacijski modeli industrijskog procesa omogućavaju definiranje niza procesno važnih procesnih parametara kao što su protok, sastav, temperatura, tlak i sl. Poznajući navedene procesne parametre možemo utvrditi potrebe za sirovinama, utrošenom energijom, kapacitetom procesne opreme i dr.
Abstract (english)
Food processes diagrams are the most essential parts of the technical documentation of process plants. They are necessary for the planning and preparation of the technical documentation of the mechanical part of the plant, in the management and construction of the plant, and for managing the technological process, technical inspections, operation and maintenance of the plant. When designing schemes, we use symbols that show individual flows and the entire process plant and follow the rules for creating projects of foodtechnological processes. When the process scheme is fully defined, a simulation of the process can be carried out, which will provide information about the functioning of the process even before its final execution. This process simulation model allows the prediction of a number of process-important parameters such as flow, composition, temperature, pressure, etc. According to these parameters, we can determine the needs for raw materials, energy consumed, process equipment capacity, etc.
