Abstract
Jestiva biljna ulja su organski spojevi definirani kao trigliceridi ili esteri dugolančanih masnih kiselina i alkohola glicerola iako se u njihovom sastavu nalazi i manje količine negliceridnih sastojaka kao što su fosfolipidi, neosapunjivi sastojci, slobodne masne kiseline i drugi. Postoje zasićene i nezasićene masne kiseline. Nezasićene masne kiseline su kiseline biljnog podrijetla i dijele se na mononezasićene i polinezasićene. U polinezasićene masne kiseline spadaju omega-3 i omega-6 masne kiseline. Linolenska kiselina spada u skupinu omega-3 nezasićenih masnih kiselina. Cilj ovog rada je predstaviti biljke koje su najveći izvori ulja linolenskog tipa poput konopolje, soje, lana, oraha i pšenice te opisati njihovu primjenu.
Abstract (english)
Edible vegetable oils are organic compounds defined as triglycerides or esters of long-chain fatty acids and glycerol alcohols. Although they contain smaller amounts of non - glyceride ingredients such as phospholipids, unsaponifiable ingredients, free fatty acids and others. There are saturated and unsaturated fatty acids. Unsaturated fatty acids are plant origin acids and they are divided into monounsaturated and polyunsaturated. Polyunsaturated fatty acids include omega-3 and omega-6 fatty acids. Linolenic acid belongs to the group of omega-3 unsaturated fatty acids. The aim of this work is to present the plants that are the largest sources of linolenic oil such as: flax, soy, hemp, walnut and wheat, and to describe their application.
