Abstract
Plod masline predstavlja pravo malo bogatsvo u nutritivnom i tehnološkom smislu. Vrijednost ovakvog koštuničavog voća poznata je još od davnina, a posebnu pozornost tehnologa preuzima njezin lipidni sastav. Maslinovo ulje predstavlja jedno od najpoznatijih vrsti ulja čija poizvodnja datira još od ranog brončanog doba. Proučavanje mogućih prepreka unutar tehnologije te mogućnosti sprječavanja istih postaje nemoguće bez poznavanja kemijskog sastava te osnovnih svojstava sirovine. Proces proizvodnje maslinovog ulja uključuje postupke uklanjanja nečistoća, mljevenje, miješanje, izdvajanje ulja iz maslinovog tijesta te odvajanje ulja od vegetabilne vode. U ovom radu naglasak je stavljen na sastav ploda masline, parametrima njegove kvalitete, kao sirovine u proizvodnji ulja, te svojstvima važnim za razumijevanje i opisivanje tehnološkog procesa proizvodnje maslinovog ulja.
Abstract (english)
The olive fruit represents a true little treasure in both nutritional and technological terms. The value of this stone fruit has been known since ancient times, and its lipid composition especially captures the attention of technologists. Olive oil is one of the most well-known types of oil with its production dating back to the early Bronze Age. Studying potential technological obstacles and the possibilities of preventing them has become impossible without the knowledge of the chemical composition and basic properties of the raw material. The process of olive oil production includes procedures such as removing impurities, grinding, mixing, extracting oil from the olive paste, and separating the oil from the vegetable water. This paper focuses on the composition of the olive fruit, the parameters of its quality as a raw material in oil production, and the properties important for understanding and describing the technological process of olive oil production.
