Abstract
Aflatoksini predstavljaju veliku opasnost za ljudsko zdravlje budući da izazivaju mutacije DNA i oslabljuju imunološki odgovor. U organizam se unose putem hrane životinjskog (mlijeko i mliječni proizvodi) i biljnog podrijetla te udisanjem kontaminiranog zraka. Postoje 4 vrste aflatoksina (B-1, B-2, G-1,G-2), najopasniji je B-1 koji se u jetri metabolizira u kancerogeni M-1. Spojevi aflatoksina su termostabilni te se ne uklanjaju pasterizacijom. Zbog navedenih svojstava potrebne su redovite kontrole kojima se sprječava onečišćenje sirovina i hrane. Teški metali su oni s gustoćom većom od 5 g/cm3. Dio su mineralnih sastojaka u mlijeku potrebnih za normalno odvijanje funkcija organizma, prisutni u tragovima. U tu skupinu ubrajaju se olovo, živa, kadmij i arsen. Zajednička im je karakteristika da se nagomilavaju u tkivima (osobito u jetri i bubrezima). Za njihovo uklanjanje primjenjuju se kelati ili prirodna sredstva poput zeolita, klorofila ili zelene gline. Željezo, bakar i cink prirodno se nalaze u mlijeku, ali njihova povećana koncentracija negativno utječe na stabilnost i kvalitetu mlijeka i mliječnih proizvoda. Također su donesene zakonske odredbe kojima se vrši kontrola i nadzor kako bi se opasnost od aflatoksina i teških metala svela na minimum. Ovaj rad opisuje zašto, kako i na koji način teški metali i aflatoksini dospijevaju u mlijeko i mliječne proizvode. Kako djeluju na organizam, na koji način se zaštititi od njihova djelovanja, te pomoću kojih metoda se oni mogu analizirati te kako i na koji način ih ukloniti iz mlijeka i mliječnih proizvoda kako bi oni bili sigurni za upotrebu.

Aflatoxins represent serious danger for human health since they cause DNA mutations and they weaken immune system. They enter the organism through food of animal(milk and dairy products) and vegetable origin and by breathing contaminated air. There are 4 kinds of aflatoxins (B-1, B-2, G-1, G-2), the most dangerous is B-1 which ismetabolizedin the livertocarcinogenic M-1. Compoundsof aflatoxinarethermostable and they are not removed by pasteurization. Due to theseproperties, often checks are necessary to prevent thecontamination ofraw materialsandfood. Heavy metals are those with density bigger than 5 g/cm3. They are a part of mineralingredients in milk necessary for normal functioning of organism, that are present in small quantity. This group consists of plumb, mercury, cadmium and arsenic. Their commoncharacteristic is that they accumulate in tissues (especially inside the liver and kidneys). For their removal chelates are applied or natural resources such as zeolite, chlorophyll, green clay. Iron, copperandzincare naturallyfound in milk, but theirincreased concentration has a negative effect on the stability and quality of milk and dairy products. Also legislation has been made that serve control and supervision so the danger of aflatoxins and heavy metals is minimized. This thesis describes why, how and in which way to protect yourself from their activity, and with help of which methods they can be analyzed and in what way to remove them from milk and dairy products so they could be safe to use.
