Abstract
Cilj ovog završnog rada je pobliže opisati zearalenon koji se ubraja u estrogene mikotoksine. Zearalenon je sekundarni metabolit plijesni roda Fusarium, biljnih patogena koji kontaminiraju značajne količine kukuruza, pšenice, ječma i zobi već na polju. Toksični učinak zearalenona ovisi o koncentraciji i fiziološkom stanju organizma. Zearalenon se veže za estrogene receptore pri čemu nastaje kompleks koji ulazi u staničnu jezgru i izaziva brojne biokemijske i biološke učinke. Kod životinja uzrokuje pojačan rast i veću koncentraciju mišićnog tkiva, te sprječava ovulaciju. Rast plijesni se može spriječiti na različite načine, u pravilu uporabom hibrida koji su otporni na plijesan, prikladnim vremenom sjetve i berbe, te pravilnim plodoredom. U slučaju kontaminacije sirovina primjenjuju se ciljane mjere dekontaminacije koje bi trebale inaktivirati ili potpuno ukloniti mikotoksin.
Abstract (english)
The goal of this paper is to describe zearalenone, which is one of the estrogenic mycotoxins, secondary metabolite of the Fusarium spp fungi. Fusarium species are plant pathogenic fungi, with several species causing diseases on maize, wheat, barley and other food and feed grains. Fusarium mycotoxins have toxic effects that depend on the concentration and the condition of the patient. Zearalenone can occupy and stimulate estrogenic receptors. It is frequently implicated in reproductive disorders of animals and in high concentrations can interfere with conception and ovulation. Selection of appropriate materials, crop rotation and tillage can prevent fungal growth. In case of contamination of cereals, several strategies can be applied to counteract possible deleterious effects of this mycotoxin.
