Abstract
Cilj ovog završnog rada jest prikazati put biosinteze patulina. Patulin je toksični sekundarni metabolit kojeg sintetizira više vrsta plijesni Aspergillus, Penicillium, Byssocglamys i Paecilomyces. U početku je korišten kao antibiotik sve do otkrića toksičnosti za ljude i životinje. Mikotoksin koji se najčešće nalazi u jabuka te proizvodima od jabuka kao što su kompot, sok, marmelada, jabučno vino, no može kontaminirati i grožđe, ananas, breskve, marelice. Put biosinteze je složen proces koji se sastoji od 10 koraka. Najvažnije reakcije pomoću kojih se odvija sinteza patulina su kondenzacijske i redoks reakcije. Patulin je toksin stabilan pri niskim pH vrijednostima te je otporan na termičku denaturaciju. Može se ukloniti nekim antioksidansima ili antimikrobnim sredstvima, a metode dekontaminacije patulina su još uvijek predmet znanstvenih istraživanja.
Abstract (english)
The aim of this paper is to present the metabolic pathway of patulin biosynthesis. Patulin is a toxic secondary metabolite synthesized by several species of fungi Aspergillus, Penicillium, Byssocglamys and Paecilomyces. Initially, it was used as an antibiotic; however until the discovery of toxicity for humans and animals. Mycotoxin that is most often found in apples and apple products such as compote, juice, jam, cider, but can also contaminate grapes, pineapple, peaches, apricots. The biosynthesis pathway is a complex process consisting of 10 steps, where enzymes involved are regulated by 15 genes. The most important reactions by which patulin synthesis takes place are condensation and redox reactions. Patulin is a toxin stable at low pH values and is resistant to thermal denaturation. It can be removed with some antioxidants or antimicrobials, but methods of patulin decontamination are still actual topic of scientific research.
