The aim of this work was to extract polyphenols from peel and flesh of old apple varieties, to compare varieties considering their total polyphenol amount and antiradical activity, and to conduct an adsorption experiment onto β-glucan with polyphenols from apples the richest in polyphenols. Polyphenols were extracted from flesh and peel of five apple varieties (lještarka, ljubeničarka, slavonska srčika, adamova zvijezda and wild apple), their total amount was determined by using spectrophotometric Folin-Cicalocalteau method, and the antiradical activity by using DPPH method through calculating EC50 (efficient concentration) and ARP values (antiradical power). It was found that apple peel contained more polyphenols and higher antiradical activity than apple flesh (except the wild apple which contained more polyphenols in the flesh). Two apple varieties were shown to be rich in polyphenols, wild apple (flesh) and slavonska srčika (peel). The antiradical activity was the highest in wild apple flesh and adamova zvijezda peel. The adsorption onto β-glucan was carried out with polyphenols from slavonska srčika and wild apple (flesh and peel) since they were the richest in polyphenols. The results were analysed with equilibrium adsorption models (Freundlich, Langmuir and Dubinin-Radushkevich models). Interactions between polyphenols and β-glucan were favored and the binding was physical. Polyphenols from slavonska srčika peel showed the maximum adsorption capacity according to the Langmuir isotherm.
