Apples belong to the group of fruits most susceptible to contamination with mold P. expansum. The consequences of the infection are reflected in the short-term economic losses, and the contamination of the fruits by this mold causes the accumulation of patulin in the poles, a mycotoxin whose role in causing the disease has not yet been fully elucidated. There are currently no satisfactory solutions in the world to reduce the concentration of patulin in apples and apple products. However, compared to commercial apple varieties, traditional varieties have higher proportions of polyphenolic compounds, important factors in plant protection against stress conditions, higher antioxidant activity, and a gene profile that makes them more resistant to climatic conditions, plant diseases and other forms of abiotic stress. The aim of the study is to examine the resistance of traditional apple varieties to the P. expansum colonization and the produced patulin concentrations, to determine potential differences, depending on the variety and the particular polyphenolic profile of the apple variety. Results showed that polyphenolic profile is very important for resistance on colonization by P. expansum. Despite to simmilar measured total poliphenol content valueas, as well as antioxidative activity there are some differences in P. expansum growth and patulin production observed. Apple variety ‘Zlatna zimska pramenka’ showed the highest resistace to patulin production, but also contain the highest observed cathechine concentration, high total poliphenol content and antioxidative activity. Such results indicate that resistance to P. expansum colonization could be modulated by total poliphenol content. However, further research should be carried out for scientiffic opinion establishing.
