Abstract
Polifenolni spojevi su pokazali da mogu ulaziti u interakcije sa sastojcima hrane kao što su lipidi, proteini, te ugljikohidrati. Ove interakcije se mogu pratiti kroz proces adsorpcije kroz kinetička istraživanja pri čemu se mogu dobiti informacije o redu reakcije. U ovom radu istraživana je kinetika adsorpcije galne kiseline kao polifenola i β-glukana kao prehrambenog vlakna koji spada u skupinu polisaharida. Pokazalo se da se galna kiselina adsorbirala na β-glukan tijekom vremena, a reakcija adsorpcije galne kiseline na β-glukanu bila je pseudo-prvog reda.

Polyphenolic compounds have shown that they can interact with food ingredients such as lipids, proteins, and carbohydrates. These interactions can be interpreted through adsorption process through kinetic studies where the information about the reaction order can be obtained. In this work the kinetic of reaction between polyphenol like gallic acid and dietary fiber like β-glucan have been investigated. It has been shown that gallic acid adsorbed onto β-glucan and the reaction of gallic acid adsorption onto β-glucan was the pseudo-first order.
