Abstract
Arsen je metaloid kojeg prirodno pronalazimo u vodi, tlu i zraku. Za toksični utjecaj na ljude najbitniji je unos anorganskog arsena iz vode za ljudsku potrošnju na području istočne Hrvatske. Također je bitno naglasiti i izloženost putem hrane i pića, budući da se takve vode koriste za navodnjavanje poljoprivrednih površina i pripremu hrane, pri čemu dolazi do prijelaza arsena. U ovom radu ispitivana je izloženost arsenu studenata znanosti o hrani i nutricionizma Prehrambeno-tehnološkog fakulteta u Osijeku akademskih godina od 2010./2011. do 2015./2016. Određena je koncentracija ukupnog arsena u uzorcima nožnih noktiju prikupljenih od 50 ispitanika te je uspoređivana izloženost arsenu studenata s obzirom na mjesto stanovanja (istočna Hrvatska i ostatak Hrvatske). Rezultati pokazuju značajnu razliku (p<0,01) u izloženosti arsenu, pri čemu je izmjerena prosječna koncentracija za istočnu Hrvatsku 6,5 𝜇g/kg, a za ostale dijelove Hrvatske 1,9 𝜇g/kg.

Arsenic is a metalloid naturally found in water, soil and air. In eastern Croatia, the most important determinant of toxicity in human population’s intake of inorganic arsenic from drinkingwater. It should be stressed that exposure through foods and beverages is also possible since this water is used for irrigation of agricultural land and food preparation. This study determined exposure to arsenic in Food Science and Nutrition students of Faculty of Food Technology in Osijek from academic years 2010./2011.to 2015./2016.The concentration of total arsenic was determined in toenail samples collected from 50 subjects and compared arsenic exposure of students with regard to the place of residence (eastern Croatia vs. the rest of Croatia). The results show a significant difference (p <0.01) in exposure to arsenic with an average concentration for eastern Croatia 6.5 μg/kg, and for the rest of the Croatia 1.9 μg/kg.
