Abstract
Cilj istraživanja bio je ustanoviti utjecaj infekcije pšenice s plijesni Fusarium culmorum na odabrane pokazatelje kakvoće pšeničnog slada. Provedeno je mikroslađenje dva genotipa pšenice Lucija i Osk. 110/09 od kojih je svaki genotip bio predstavljen s četiri uzorka; uzorak „1“ je kontrola, uzorak „2“ je tretiran fungicidima i nije umjetno inficiran s plijesni, uzorak „3“ je inficiran s plijesni F. culmorum i tretiran fungicidima te uzorak „4“ inficiran s plijesni F. culmorum i nije tretiran fungicidima. Nakon mikroslađenja, provedena je mikotoksikološka analiza dobivenih uzoraka slada (osušeni i stabilizirani), kao i uzoraka pšenice. Nadalje, ispitivan je utjecaj infekcije s plijesni F. culmorum i tretmana fungicidima na masu 1000 zrna, hektolitarsku masu zrna slada, razliku ekstrakta, boju sladovine, vrijeme ošećerenja, brzinu filtracije, udio formolnog dušika (FAN), Kolbach index te udio alkohola u prevreloj sladovini. Rezultati ovog istraživanja pokazali su da infekcija oba korištena genotipa pšenice s plijesni F. culmorum pridonosi smanjenju kakvoće dobivenog slada.

The aim of this study was to determine the effect of Fusarium culmorum fungi infection of wheat on the wheat malt quality indicators. Conducted micromalting procedure included two different wheat genotypes, Lucija and Osk. 110/09- each variety contained four samples, where the sample „1" was the control, the sample „2" was not contaminated with fungus and was treated with fungicides, sample „3" was contaminated with F. culmorum and treated with fungicides and sample „4" was contaminated with F. culmorum and was not treated with fungicides. Mycotoxicological analysis were conducted on wheat and malt samples (dried and stabilized malt). The impact of F. culmorum contamination on some malt quality parameters was examined. This included the test weight and of 1000 kernel weight of malt, extract difference, congress wort colour, saccharification time, filtration speed, formol nitrogen share (FAN), Kolbach index and alcohol share in congress wort. The results showed that contamination of wheat with F. culmorum significantly contributed wheat malt quality indicators decrease.
