Abstract
U radu je opisana primjena modificirane atmosfere u pakiranju i skladištenju voća. Za uspješnu primjenu ove tehnologije potrebno je postići optimalni sastav atmosfere u pakiranju, koja se može postići aktivno ili pasivno. Ova tehnika temelji se na promjeni udjela plinova (CO2, N2, O2), kao i primjeni odgovarajuće ambalaže kako bi se produžila trajnost svježem voću, spremnom za neposredni konzum. Isto tako, kod minimalno procesiranog voća preporučene koncentracije plinova ovise o pojedinom proizvodu. Općenito se može reći da su tzv. fresh-cut proizvodi tolerantniji prema višim koncentracijama CO2 od cijelih plodova pakiranih u modificiranoj atmosferi. Da bi se održao određeni sastav atmosfere specifičan za pojedinu sirovinu, odnosno proizvod, upotrebljavaju se prikladni, u pravilu višeslojni plastični ambalažni materijali (filmovi - folije), koji su opisani u radu. Ovisno o izvoru inertnih plinova, ambalažnom materijalu, vrsti uređaja za pakiranje i načinu rada postoje brojne izvedbe pakiranja u modificiranoj atmosferi.
Abstract (english)
In paper was described the application of the modified atmosphere in packaging and storage of fruits. For the successful application of this technology is necessary to achieve the optimum composition of the atmosphere in the packaging, which can be achieved by active or passive way. This technique is based on the change in the proportions of gases (CO2, N2, O2), as well as the application of appropriate packaging to prolong the shelf life of fresh fruits, ready for consumption. Also, in minimally processed fruits recommended gas concentrations depended of the particular product. In general, fresh-cut products are more tolerant to higher concentrations of CO2 from the whole fruits packed under modifi ed atmosphere. In order to maintain a gas mixture specific for a product, multilayer, plastic packaging materials (films) applied. Depending on the source of inert gases, packaging material, the type and mode of packaging under modified atmosphere, there are numerous types of packaging machines.
