Abstract
Republika Hrvatska raspolaže velikim površinama pod vinogradima. Za područje Slavonije i Baranje proizvodnja vina predstavlja vrlo važnu gospodarsku djelatnost. Pri toj proizvodnji vina nastaje prilična količina komine kao vrijednog nusprodukta, koja se u današnje vrijeme uglavnom upotrebljava kao gnojivo u vinogradima. Cilj ovog rada bio je iskoristiti otpad od proizvodnje vina s posebnim naglaskom na sjemenkama grožđa i na novim zelenim tehnologijama. Kao „zeleno“ otapalo u ekstrakciji ulja iz sjemenki grožđa primjenio se superkritični CO2 koji se pokazao kao vrlo poželjno otapalo u separacijskim procesima budući da je neotrovan, nezapaljiv, bez okusa i mirisa, jeftin i lako dostupan u većim količinama, zbog toga što je ekološki prihvatljivo i GRAS (generalno prihvaćen kao sigurno) otapalo. Ispitan je utjecaj različitih procesnih parametara ekstrakcije ulja iz sjemenki grožđa primjenom superkritičnog CO2 na prinos kao i na antioksidacijska svojstva dobivenih ulja te udio biaktivnih komponenata. Optimiranje procesa ekstrakcije grožđanog ulja provedeno je metodom odzivnih površina uz primjenu programa Design Expert®. Ulje dobiveno ekstrakcijom superkritičnim CO2 se osim kao dijetetski proizvod može koristiti i u kozmetičkoj industriji. Također, nakon procesa ekstrakcije ulja iz sjemenki grožđa zaostaje i odmašćeno brašno koje se dalje može koristiti u druge svrhe (u proizvodnji obogaćenih ekstrudiranih proizvoda, itd.).

Parallel abstract (English)
The Republic of Croatia has large areas under vineyards. For Slavonia and Baranja area wine production represents an important economic activity. During wine production a considerable amount of pomace as a valuable by-product occurs, which is nowadays mainly used as a fertilizer in the vineyards. The aim of this study was to use waste from the wine production process with special accent on grape seeds and new green technologies. Supercritical CO2 was used as a green solvent in extraction of grape seed oil and it has already been proven to be a highly desirable solvent in the separation processes, since it is non-toxic, non-flammable, tasteless, no smell, inexpensive, readily available in large quantities, because it is environmentally friendly and GRAS (generally recognized as safe) solvent. The effects of different extraction process parameters were investigated. The extraction yield, antioxidant activity and the content of bioactive compounds of obtained oils were determined. Extraction optimization was conducted using response surface methodology (RSM). Extracted oil can be further used not only like dietary product while also in the cosmetic industry. Furthermore, defatted grape flour resulting from the supercritical extraction of grape oil could be also used for other purposes (in the production of enriched extruded products, etc.).
