Abstract
Cilj ovoga rada bio je ustanoviti mogu li se botanički različite vrste meda međusobno razlikovati na osnovi UV/VIS krivulja, trodimenzionalnih spektara fluorescencije, te emisijskih spektara fluorescencije. Analiza UV/VIS profila otopina meda u području od 200 do 400 nm pokazala je da se botanički različite vrste meda mogu slabo razlikovati na osnovi UV/VIS profila apsorbancije. Po obliku krivulja absorbancije moguće je razlikovati samo med kestena i lipe. Snimanjem trodimenzionalnih spektara fluorescencije u rasponu valnih duljina ekscitacije od 260 do 400 nm te emisije u rasponu od 300 do 600 nm utvrđeno je da uzorci meda različitog botaničkog porijekla pokazuju različite trodimenzionalne spektre fluorescencije uz karakteristične vrhove fluorescencije centrirane pri različitim valnim duljinama ekscitacije i emisije. Dodatno, analizom normaliziranih emisijskih krivulja fluorescencije pri 260 nm utvrđeno je da se uniflorne vrste meda mogu razlikovati prema međusobnim oblicima krivulja. Pomakom ka višim ekscitacijskim duljinama (280, 330, 370 i 390 nm) lošija je mogućnost razlikovanja pojedine vrste meda.

The aim of this study was to determine whether the different botanical types of honey can be differentiated on the basis of UV/VIS absorption spectra, three-dimensional fluorescence spectra and fluorescence emission spectra. Analysis of UV/VIS absorption spectra recorded in a range from 200 to 400 nm, revealed low possibility of differentiation of botanical types of honey. By UV/VIS absorption spectra only chestnut and linden honey can be differentiated. Three-dimensional fluorescence spectra recording (excitation 260-400 nm; emission 300-600 nm) showed that unifloral honeys possess different three-dimensional fluorescence spectra. These spectra have characteristic fluorescence peaks centred at different wavelengths of excitation and emission. Additionally, analysis of the normalized emission spectra at 260 nm showed that unifloral honeys can be differentiated by curve shapes. Shift towards higher excitation lengths (280, 330, 370 and 390 nm) results in lower differentiation of certain types of honey.
