Abstract
U ovome završnom radu opisuju se autohtoni mliječni proizvodi Republike Hrvatske. Uvodni dio opisuje povijesni aspekt nastanka, proizvodnje i konzumacije mljekarskih proizvoda, još od rane povijesti čovječanstva, te uzročno poslijedičnim vezma povezuje ondašnje proizvode sa današnjim tradicionalnim proizvodima. Drugi ulomak rada definira pojam autohtonosti, te iznosi neke osnovne pravne odredbe u vezi označavanja proizvoda autohtonima, odnosno izvornima na području Republike Hrvatske. Treći dio rada opisuje najbrojnije autohtone mliječne proizvode, sireve. Kako bi popis bio što pregledniji, sirevi su podijeljeni u skupine prema području iz kojega potječu. Svaki navedeni sir je ukratko opisan, uz način proizvodnje koji ukratko prikazan. Svaki primjer popraćen je shematskim prikazima i slikama. U poslijednjem dijelu opisuju se ostali mliječni proizvodi koji se također tradicionalno proizvode na prostorima Republike Hrvatske, popraćeni bitnim detaljima proizvodnje.
Abstract (english)
This final paper describes indigenous dairy products in Republic of Croatia. Introduction deals with historical origin, production and consumption of dairy products since the early history of mankind, and in relation to the traditional products nowdays. Second part defines concept of autochthony and brings up some legal directives about autochthonous products in Republic of Croatia. Cheeses, the most numerous autochthonous dairy products, are introduced in the third part of the paper. They are divided into groups based on the region of their origin. Every sort of cheese is shortly described, as well as its specific type of production. Each example is illustrated with schemes and pictures. The remaining traditional dairy products of Republic of Croatia are mentioned in the third part of the paper and illustrated in the same way.
