Abstract
Zadatak ovog rada je bio ispitati količine selena (Se) koje se nalaze u kozjem mesu te ih korelirati s količinama selena u jetri, bubrezima i mlijeku. Uzorci su dobiveni od koza iz više domaćinstava na području Baranje. Koze su pet mjeseci suplementirane preparatom Selplex, proizvođača Nutritech, Auckland (Novi Zeland). Ispitano je 19 uzorka mesa, 20 uzoraka jetre, 22 uzorka bubrega i 37 uzoraka mlijeka. Razaranje uzorka je provedeno vlažnim spaljivanjem uzoraka u mikrovalnom uređaju uz 65 % HNO3 i 30 % H2O2. Udio selena u otopinama određen je atomskom apsorpcijskom spektrometrijom. Utvrđene su sljedeće koncentracije (izražene na izvornu masu uzorka): meso 59,37 – 1038,08 ng/g, bubrezi 566,10 - 1004,32 ng/g, jetra 186,60 - 960,24 ng/g, te mlijeko 9,41 - 180,99 ng/g. Usporedbom uzoraka nije utvrđena statistički značajna povezanost koncentracija Se u mesu s razinama u uzorcima jetre, bubrega ili mlijeka. Postoji tek slaba negativna povezanost između uzoraka bubrega i mlijeka. Drugim riječima, što je više selena izlučeno preko bubrega, manja koncentracija je utvrđena u mlijeku.

The aim of this study was to examine concentrations of selenium (Se) in goat meat and compare them with levels of Se in liver, kidneys and milk. Samples were obtained from several goat farms in Baranja. Goats’ feed was supplemented for five months with Selplex (Nutritech, Auckland, New Zeland). Nineteen samples of meat, 20 samples of liver, 22 kidney samples and 37 milk samples were analyzed. Destruction of samples was performed by microwave-assisted wet digestion using 65% HNO3 and 30% H2O2. Selenium concentration was measured using atomic absorption spectrometer. The following concentrations were determined (expressed per original sample weight): meat 59.37 – 1038.08 ng/g, kidneys 566.10 – 1004.32 ng/g, liver 186.60 – 960.24 ng/g, milk 9.41 – 180.99 ng/g. No correlation between Se meat concentrations and levels in kidney, liver or milk samples was established. Only a weak relationship was determined between Se levels in kidney and milk. The results imply that the more selenium was excreted by the kidneys the less concentration was determined in milk.
