Abstract
Zadatak ovog rada bio je utvrditi utjecaj majčinog unosa pojedinih nutrijenata hranom na sadržaj olova u posteljici. Preliminarno ispitivanje se sastojalo od provedbe upitnika učestalosti namirnica (UUN) među 15 rodilja s područja grada Osijeka. Provedena je analiza posteljica 85 rodilja uzorkovanih u istom periodu kad je proveden UUN. Razina olova u posteljicama određena je metodom grafitne tehnike atomske apsorpcijske spektrometrije. Rezultati su pokazali da je razina olova u posteljicama na gornjoj granici raspona prosječnih koncentracija utvrđenih drugim radovima. Postoji slaba pozitivna povezanost razine olova s bjelančevinama životinjskog podrijetla, ukupnim mastima, zasićenim masnim kiselinama, kolesterolom i selenom. Utvrđena je i tendencija negativne veze unosa vlakana, magnezija te vitamina C i ß-karotena s razinom olova. Niti jedna od utvrđenih korelacija nije dosegla statističku značajnost. Ovo istraživanje na relativno malom uzorku rodilja pokazalo je da se prehranom koja uključuje optimalan odnos bjelančevina, masti i ugljikohidrata i unos nutrijenata koji smanjuju apsorpciju i retenciju olova, može sniziti razina olova u posteljici i moguća izloženost fetusa.

The aim of this work was to determine the influence of maternal intake of certain nutrients on placental lead content. Preliminary research consisted of the implementation of Food Frequency Questionnaire in a group mof 15 pregnant women from Osijek region. A total of 85 placental samples were collected during the same period and lead levels were analyzed by graphite furnace atomic absorption spectrometry. Compared to average concentrations reported by other authors, the determined lead levels are at the high end of the normal range. Weak positive correlations were found between placental lead levels and animal protein, total fat, saturated fatty acid, cholesterol and selenium intakes, respectively. A tendency of inverse relationship between dietary fiber, magnesium, ß-carotene and vitamin C intakes and placental lead levels exists. None of the determined associations were statistically significant. This research on a small sample indicates that a diet with an optimal ratio of protein, fat and carbohydrates as well as intake of nutrients that reduce lead absorption and retention, can lower placental lead levels and possible exposure of fetus.
