Abstract
Čaj je proizvod od obrađenog i osušenog lišća čajevca Camellia sinensis. Biljka Camellia sinensis uzgaja se na plantažama, „oblikuje“ u obliku grma, a bere više puta godišnje. Konzumira se još od drevnih vremena, a smatra se da potiče iz Kine. U Europi se čaj najviše konzumira u sjevernim zemljama. U 18. stoljeću u Engleskoj popularnost čaja nadvladala je kavu, te je od tada postao nacionalnim napitkom. Prema stupnju fermentacije razlikujemo nekoliko vrsta čajeva: crni, zeleni, oolong, bijeli, Rooibos čaj, biljni čajevi, voćni čajevi, te aromatizirani čajevi. Zeleni čaj je nefermentirani čaj, a proces proizvodnje provodi se tako da ubrano lišće prvo ide na mekšanje i dehidrataciju. Omekšano lišće se zagrijava prženjem ili vodenom parom. Nakon toga slijedi proces uvijanja i sušenja.
Abstract (english)
Tea is a product of the processed and dried leaves of Camellia sinensis Tea tree. Plant Camellia sinensis is grown on plantations, "shapes" in a bush and harvested several times a year. Consumed since ancient times, is considered to be originated in China. In Europe, tea is consumed mostly in the northern countries. In the 18th century in England overcome the popularity of tea maker, and has since become the national drink. According to the degree of fermentation to distinguish between several types of tea: black, green, oolong, white, Rooibos tea, herbal teas, fruit teas and flavored teas. Green tea is unfermentation tea, a production process is conducted so that the leaves picked in the first go soften and dehidration. The leaves are softened and heated frying or steam. Then follows the process of twisting and drying.
