Abstract
Cilj ovog rada bio je odrediti antioksidativnu aktivnost modelnih otopina fenolnih tvari s dodatkom trehaloze te utvrditi postoji li sinergijski učinak modelnih otopina kombinacijom fenolnih tvari s dodatkom trehaloze. Antioksidativna aktivnost određena je ABTS, DPPH i FRAP metodom. Usporedbom eksperimentalnih vrijednosti s teorijski izračunatim vrijednostima antioksidativne aktivnosti utvrđeno je dolazi li do sinergijskog učinka. Najveću antioksidativnu aktivnost, određenu ABTS, DPPH i FRAP metodom, pokazuje modelna otopina katehina, kvercetina i galne kiseline s trehalozom, a najmanju antioksidativnu aktivnost pokazuje otopina galne kiseline s trehalozom. Sinergijski učinak, kod svih tri metoda, pokazuje modelna otopina katehina i galne kiseline s trehalozom, dok ni jednom metodom nije dokazan sinergijski učinak modelne otopine katehina i kvercetina s trehalozom.

Parallel abstract (English)
The aim of this work was to determine the antioxidant activity of model solutions of phenolic compounds with addition of trehalose and determined the synergistic effect of combination of model solutions of phenolic compounds with the addition of trehalose. The antioxidant activity was determined by ABTS, DPPH and FRAP method. By comparing the experimental value with the theoretical, calculated value of antioxidant activity, it was determined whether the synergistic effect exist. The highest antioxidant activity, with ABTS, DPPH and FRAP method, had a model solution of catechin, quercetin and gallic acid with trehalose, and the lowest antioxidant activity had a solution of gallic acid with trehalose. With all three methods, synergistic effect was observed for a model solution of catechin and gallic acid with trehalose, while a model solution of catechin and quercetin with trehalose did not show synergistic effect.
