Abstract
Sirutka je sporedni proizvod koji nastaje u tehnološkom procesu proizvodnje sira, a sastav i svojstva ovise o tehnologiji proizvodnje osnovnog proizvoda te o kakvoći korištenog mlijeka. Sirutka sadržava najviše laktoze, proteine najveće biološke vrijednosti, bitne mineralne i imunoaktivne tvari te uglavnom vitamine B skupine. Može se koristiti za pripravu fermentiranih i probiotičkih napitaka, te za proizvodnju albuminskog sira.
Abstract (english)
Whey is a by product in the process of cheese production. Composition and characteristics of whey are depending on the production technology, the end product and the quality of used milk. Whey is consisted primarily of lactose, proteins of high nutritive value, important minerals and imunoactive compounds, as well as vitamins of B group. It can be used for fermented probiotic drinks and albumin cheese production.
