Abstract
Cilj ovog završnog rada je opisati sekundarne metabolite plijesni Penicillium expansum te prikazati izazove s kojima se prehrambena industrija i poljoprivreda suočavaju uslijed kontaminacije proizvoda ovom plijesni. Penicillium expansum kontaminira, razvija se i razmnožava na voću i povrću, posebno jabukama, te uzrokuje njihovo kvarenje. Uz navedeno plijesan producira sekundarne metabolite koji su štetni za ljudsko zdravlje. Patulin je poliketid čija toksičnost i pojavnost u nefermentiranim proizvodima od voća daju razlog za istraživanje njegovih svojstava te osobito načina njegove eliminacije iz hrane. Citrinin je također poliketid čija prisutnost u hrani nije regulirana zakonom i koji se najčešće pronalazi u žitaricama i njegovim proizvodima te je nefrotoksičan. Komunesin B, rokefortin C, dihidrocitrinon, keatoglobin A i C, andrastin A, B i C i dihidrocitrinon su ostali poznati sekundarni metaboliti plijesni Penicillium expansum koji nisu dovoljno dobro istraženi te su predmet aktualnih znanstvenih istraživanja.
Abstract (english)
The aim of this paper is to define secondary metabolites of Penicillium expansum and give an insight in challenges food processing industry and agriculture face as a result of food contamination with the fungi. Penicillium expansum contaminates fruits and vegetables, especially apples, and causes it to rot. This fungus also produces toxic secondary metabolites that are harmful for human health. Patulin is polyketide which toxicity and occurrence in unfermented fruit products encourage researches for further research of its properties, especially its elimination from food. Citrinin is also polyketide whose presence in food is not regulated by the law and which is mostly found in cereals and its products, and it is nephrotoxic. Communesins B, roquefortine C, chaetoglobosins A and C, dihydrocitrinone, andrastin A, B are other secondary metabolites of Penicillium expansum for which are still under the research.
