Abstract
U ovom radu je objašnjena tehnologija proizvodnje Slavonskog kulena. Slavonski kulen je autohtona hrvatska trajna fermentirana kobasica od svinjskog mesa koja se proizvodi tehnološkim postupcima dimljenja, sušenja i zrenja. Ovaj mesni specijalitet je od velike važnosti za regiju Slavoniju kao tvorevina koja je svojim postojanjem obilježila povijest, tradiciju i kulturu življenja. Slavonski kulen je uveden u listu zaštićenih kulturnih dobara Republike Hrvatske. Nije nam poznato kada je ovaj proizvod nastao prvi puta, ali je poznato da je potrošnja bila vezana uz posebne društvene i obiteljske događaje kao što su krštenja, rođendani, vjenčanja, kao poklon i slično. U proizvodnji je važan odabir pasmine svinje, uzgoj i tov svinje za meso, odabir komada mesa, crijeva i začina, kontrola faza proizvodnje kao i receptura.

This paper explains the technology of producing Slavonian Kulen. Slavonian Kulen is a native Croatian permanent fermented pork sausages produced with technological processes of smoking, drying and ripening. This specialty is of great importance for the region of Slavonia as a creation that its very existence was marked by history, tradition and culture of life. Slavonian Kulen was introduced in the list of protected cultural monuments of Croatian. We do not know when this product was created for the first time, but it is known that consumption was associated with special social and family events such as baptisms, birthdays, weddings, as gifts and the like. For the production itself are important selection of pig breeds, breeding and fattening pigs for meat , selection of meat cuts , the intestines and spices, control of the production phases as well as recipes.
