Abstract
Metalni ambalažni materijali posjeduju dobra mehanička i toplinska svojstva. Limenke, poklopci, zatvarači, kante, bačve i metalne tube ubrajaju se u metalnu ambalažu. Proces korozije i nastanak galvanskog članka javlja se kao neželjena posljedica interakcije metalnih ambalažnih materijala s hranom. Organske prevlake, zaštitne prevlake od kositra nanose se na unutrašnji dio metalne ambalaže u koju se pakira hrana s ciljem sprječavanja nastanka elektrokemijskih reakcija, korozije i galvanskog članka. Posljedica korozije je nastanak hrđe na unutarnjem dijelu metalne ambalaže, zatim promjena senzorskih karakteristika hrane i negativan utjecaj na zdravstvenu ispravnost hrane. Na nacionalnoj razini propisan je Pravilnik o zdravstvenoj ispravnosti materijala i predmeta koji dolaze u neposredan dodir s hranom (NN RH 125/09 i 31/11) te Uredbe na razini Europske unije s ciljem propisivanja najveće dopuštene količine metala koji može migrirati iz metalne ambalaže u hranu. Cilj ovog završnog rada je bio opisati metalne ambalažne materijale, interakciju između metalne ambalaže i hrane te elektrokemijske reakcije koje se odvijaju tijekom interakcije metalne ambalaže i hrane.

Metal packaging possess good mechanical and thermal properties. Cans, lids, caps, buckets, barrels and metal tubes are different types of metal packaging. Corrosion and the appearance of the galvanic cell are unwanted consequences of interactions between metal packaging and food. In order to prevent the appearance of electrochemical reactions, corrosion and galvanic cell, organic coatings, protective coatings of tin are applied to the inner part of the metal packaging. Thus, the unwanted interaction of metal package with food is prevented. The consequence of corrosion is the formation of rust on the inner part of the metal packaging, a change of the organoleptic properties of food and a negative impact on food safety. The ordinance on the health safety of the materials and subjects that come into direct contact with food is prescribed at the national level (NN RH 125/09 and 31/11) and the Regulation at the European Union level with the aim of prescribing the maximum level of metals that could migrate from the metal packaging into food. The aim of this work was to describe metal packaging materials, interactions between the metal packaging and food and electrochemical reactions that take place during the interaction between metal packaging and food.
